研究揭示轉地養蜂不同花期生產的蜂王漿成分和功能差異

  近日,中國農業科學院蜜蜂研究所資源昆蟲生物學與飼養團隊通過蜂王漿代謝組和蛋白質組比較分析,揭示了轉地養蜂過程中不同花期生產的蜂王漿化學成分和抗氧化活性的差異,相關成果發表在《國際食品研究(Food Research International)》。

  蜂王漿的品質備受消費者關注,它主要由蜂群狀態、環境條件、養蜂管理方式等多種因素決定。其中,轉地養蜂會導致哺育蜂的氧化應激水平變化和主要泌漿腺體──咽下腺體積減小,同時,不同的蜜粉源植物影響蜂王漿10-HDA等重要成分的含量。為了全面認識轉地養蜂對蜂王漿品質的影響,科研人員以蜂王漿高產蜂種漿蜂為研究對象,比較了同一個轉地蜂場在五個花期生產的蜂王漿組分以及抗氧化活性差異。

  研究發現,蜂王漿代謝譜和蛋白譜均受花期影響,其中棉子糖、吡喃葡糖基蔗糖、蔗糖等低含量糖類和蜂王漿主蛋白5(MRJP5)的含量變化最大。10-HDA含量也受花期影響,在茶花期升高了11.05%–19.65%。3-甲基組氨酸、N-乙酰多巴胺等物質的含量變化影響了蜂王漿的抗氧化活性,荊條期生產蜂王漿的鐵離子還原抗氧化能力增加了2.19–2.65倍。此外,蜂王漿樣品的含水量、蛋白質含量、10-HDA含量等均符合蜂王漿國際標準(ISO 12824:2016)。該研究為全面評價我國漿蜂生產的蜂王漿品質提供了豐富的組學數據,進一步證明了漿蜂蜂王漿的優質特性,為提升我國蜂王漿品質提供了新思路。
